Butterscotch Cupcakes

I've been trying to play around with different flavors lately and while looking through cupcake ideas I decided I'd try a butterscotch cupcake. I've never had butterscotch so I was nervous about diving into this blindly.

I looked at a ton of Butterscotch recipes (Holy Cow! There are a lot! Haha!) so that I could get a feel of what would be going on and started to pull a little of this and that to form the recipe I would use.

I saw that one recipe actually made a butterscotch ganache as a filling for the cupcake and I thought that was awesome. I ignored the recipe they had for the ganache and made my own. It turned out really good, but it was harder to make than I thought. Haha. Next time I'm going to cut back the milk (it was a little too runny for my taste) and melt the butterscotch chips first.

I must say that the frosting, which was butterscotch too, was absolutely divine. It was the perfect frosting creaminess and the explosion of butterscotch complimented my butter cream cupcake so well.

After the cupcakes were cooled I poured my ganache into the middle of the cupcake.
Problem: My ganache was runny so instead of sitting comfortably inside my cupcake, the cuppie "drank" up the ganache. The great thing about it absorbing into the cupcake was that it infused the butter cream cake with butterscotch. It didn't hurt the cuppie at all! Next time I need to try to get it thicker, but I don't want to take away the benefits my accident made. Something to think about... :-)

Coffee & Donuts Cupcake

I've been really wanting to do a Coffee & Donuts Cupcake. I had this big vision of Commissioner Gordon chowing down on this cupcake idea! I have a Mocha Cupcake, but I wanted a cupcake that screamed your stereotypical cop snack...and what screams that better than coffee and (you guessed it haha) donuts?!

So I had my hubby brew a strong cup of coffee for me and I started baking. I even bought some coffee liqueur to spice things up! I finished with the batter and tasted it. Umm. Where was the coffee?? I certainly couldn't taste it. So I added some more coffee, liqueur, and even a dash of espresso powder. Pow! Now I tasted it! And yeah, it was good! I couldn't stop "tasting" the batter...you know it's very important to taste batter...I mean...I HAVE to make sure it tastes good and between tastings it might change...or um...something like that. Hahah.

I gently placed my lil cuppies on the oven and waited. Ding! I pulled them out and started my frosting. A Coffee Frosting of course. :-) I must say that the whole coffee, liqueur, & espresso blend made it delicious! Then I started on my mini donuts. I have the cutest little donut machine my hubby got me for Christmas. I love the recipe, French Vanilla Donuts, that came with the maker so I went ahead and just used that one. For the "icing" I just topped each mini donut with a smear of my coffee frosting. I was too lazy to make a separate donut icing. :-P

The cupcakes were finally cooled and I frosted them all and topped them off with a mini donut. I grabbed a cupcake for myself and Nate. We were excited about this new cupcake. Biting into it you had a great burst of coffee frosting...did I mention how yum it was?! But...something was missing in my cupcake. Can you guess?! The coffee. Somehow that strong coffee taste in the batter baked out while in the oven. We just couldn't find the coffee anywhere! Sigh. Needless to say, I was disappointed. I want to try it again...but first I need to figure out how to keep the coffee taste all the way through... If you have any thoughts, feel free to share!!

Yellow was my inspiration...

Today was my friend's birthday and I made her some cupcakes for her special day! I first made a batch of my Ivy's Lure and topped them with a chocolate candy sunflower (her favorite flower) and then I made Chocolate Cupcakes with Vanilla Buttercream Frosting tinted yellow. I had originally wanted the yellow to be swirled inside of the white buttercream, but I wasn't able to carry it out the way I wanted so I carefully added the icing color so I could get a soft yellow color...there was no way I was making her bright, clown yellow cupcakes!

I really need to get better about taking pictures of the finished project, but here are a few that I took before I loaded them for travel. Hopefully someone at the party got a picture so I can add it here!

Happy Birthday Cupcakes!


This weekend was spent baking cupcakes for my nephews birthday party. I baked 3 dozen cupcakes which consisted of:

I even made the "Happy Birthday" chocolate toppers for the cuppies!
I loved watching the kids eat the cupcakes. I think the process of "properly" eating a cupcake is lost on them. They all licked off the frosting like ice cream and then ate the cake. Haha. It was so cute and hilarious!
