I must admit that while the cupcake was rather forgettable (I just couldn't taste the root beer in the cupcake even though I added plenty of root beer and root bear extract)...the Vanilla Ice Cream Frosting (yes! it's actually made with ice cream!) was unbelievably delicious! I see now that the lollipop stick would have stuck better if I had let it firm up in the freezer and then dunked the whole thing in the melted chocolate. I didn't get a nice clean look, but at least I got it on there successfully! </div><div style="text-align: left;"><br /></div><div style="text-align: left;">This is where it becomes time consuming by the way. I would not recommend making cake pops if you don't have at least 2 - 2 1/2 hours to spend. I've never had butterscotch so I was nervous about diving into this blindly.</div><div style="text-align: center;"><br /></div><div>I looked at a ton of Butterscotch recipes (Holy Cow! There are a lot! Haha!) so that I could get a feel of what would be going on and started to pull a little of this and that to form the recipe I would use. </div><div style="text-align: center;"><br /></div><div>I saw that one recipe actually made a butterscotch ganache as a filling for the cupcake and I thought that was awesome. I ignored the recipe they had for the ganache and made my own. It turned out really good, but it was harder to make than I thought. Haha. Next time I'm going to cut back the milk (it was a little too runny for my taste) and melt the butterscotch chips first.</div><div style="text-align: center;"><br /></div><div>I must say that the frosting, which was butterscotch too, was absolutely divine. It was the perfect frosting creaminess and the explosion of butterscotch complimented my butter cream cupcake so well.</div><div style="text-align: center;"><br /></div><div>After the cupcakes were cooled I poured my ganache into the middle of the cupcake. </div><div>Problem: My ganache was runny so instead of sitting comfortably inside my cupcake, the cuppie "drank" up the ganache. The great thing about it absorbing into the cupcake was that it infused the butter cream cake with butterscotch. It didn't hurt the cuppie at all! Next time I need to try to get it thicker, but I don't want to take away the benefits my accident made. I even bought some coffee liqueur to spice things up! I finished with the batter and tasted it. Umm. Where was the coffee?? I certainly couldn't taste it. So I added some more coffee, liqueur, and even a dash of espresso powder. Pow! Now I tasted it! And yeah, it was good! I couldn't stop "tasting" the batter...you know it's very important to taste batter...I mean...I HAVE to make sure it tastes good and between tastings it might change...or um...something like that. Hahah.</div><div><br /></div><div>I gently placed my lil cuppies on the oven and waited. Ding! I pulled them out and started my frosting. A Coffee Frosting of course. :-) I must say that the whole coffee, liqueur, & espresso blend made it delicious! Then I started on my mini donuts. I have the cutest little donut machine my hubby got me for Christmas. I love the recipe, French Vanilla Donuts, that came with the maker so I went ahead and just used that one. For the "icing" I just topped each mini donut with a smear of my coffee frosting. I first made a batch of my <span style="font-style: italic;">Ivy's Lure</span> and topped them with a chocolate candy sunflower (her favorite flower) and then I made Chocolate Cupcakes with Vanilla Buttercream Frosting tinted yellow. I had originally wanted the yellow to be swirled inside of the white buttercream, but I wasn't able to carry it out the way I wanted so I carefully added the icing color so I could get a soft yellow color...there was no way I was making her bright, clown yellow cupcakes!<br /><br />I really need to get better about taking pictures of the finished project, but here are a few that I took before I loaded them for travel. The shower spews out water so hot that it would scald most skin. She steps in and begins to wash off the stench of the city, the dried blood, and...hmm...that looks like a tooth. Taking a deep breath, the steam opens her tired lungs and clears out the chaos in her mind. As the last bit of grime washes off, this statuesque woman steps out of the shower and wraps a towel around the freshly pruned skin.<br /><br />Warm fuzzy socks and a random long t-shirt is picked out and the last bit of water is squeezed out of her long black hair. She pours herself a glass of red wine and turns on sad, soulful music. She can sit and rest, but that would allow thoughts to creep in and honestly thinking is just a bit over-rated right now. Our black haired raven, Helena, walks into the kitchen. It's time for something sweet after a night of punching evil multiple times into a bloody pulp. Flour, sugar, strawberries, chocolate. It's a baking swirl as each ingredient is mixed in her mixer. She smiles. The drone of her mixer has a strangely comforting sound to it.<br /><br />Another sip of wine and she begins to pipe some Strawberry Frosting unto her freshly cooled Dark Chocolate cupcake. She remembers that tucked away in her fridge are some fresh strawberries Black Canary sent over. A smile tugs at her face. Dinah is always thinking of things to send over. "She must think I never stock my fridge or pantry."<br /><br />Helena dips the strawberries into a Dark Chocolate Ganache and gently places it on her cupcake. Feminine. Captivating. Strong. Sweet. All things she shares in common with her freshly baked delicacy. But she'd kick the living snot out of you if you even breathed a word of it to her comrades. She learned how to survive at young age when her parents were murdered in front of her at the dinner table. She grew up too fast. She saw evil too young. But evil couldn't take her softness she tries to keep hidden from view. When she's at home it's okay, but when that costume is donned there is only room for strength...hard strength.<br /><br />She protects her people. They need her. But who protects her? Who watches over the Huntress? She'd like to think no one. But it's a lie. Batman may not trust her completely, but he'd protect her in a moment. Black Canary would give her life for Huntress. He has readily given his life over to care for the boy left parentless so many years ago. He is multi-talented and a necessary component of the Bat-family. Alfred. Alfred Pennyworth, guardian & butler to Bruce Wayne and the man who is, Batman's Batman. Alfred is a memorable character in the DC Universe and it might be safe to say he is loved by many fans.<br /><br />Alfred is always on his feet...tending to Wayne Manor, the Batcave and the Batman Family. But this butler has always provided a comical relief to the darkness that follows his master. I've always been able to see Alfred's "fun" side. The side that remembers the day of "letting down his hair" and being a playboy, actor (you know he was totally a stud growing up haha).<br /><br />I had a cupcake in mind to make, but no character to claim it. Then as different Superhero/villains were dancing in my head Alfred took the stage and stole the cupcake.<br /><br />A butler always wears black and white. My cupcake is black and white. Butlers pretend (or at least I like to think they do) that they are one dimensional...no fun...no flair, but in reality it's just a show. They do have a secret fun side! Alfred's cupcake is a Dark Chocolate Cake with an Oreo Filling sprinkled with crushed Oreos. Yum. See? Black & White. But the whole Oreo flair adds a different fun side to the whole sophisticated look.<br /><br />I've tried different ways of making Dark Chocolate cake, but nothing has ever tasted dark chocolaty to me. So I did a little research and found that if you use Dutch Processed Cocoa you'll end up with a darker tasting cake. I went and purchased a can and viola! it was a darker chocolate. Then for the Oreo topping I went a-looking to see if I could find a recipe that would help me re-create that famous Oreo filling. I refused to just pull apart a bunch of cookies, whip the filling and pipe it on my cupcakes. Um ew. So I found a recipe that looked promising and wearily tried it out. OMFG! It tastes so close to the real thing...except I think mine is kinda better. Haha.<br /><br />I knew it would be too thick to pipe so I started plopping away. I made sure each jumbo Dark Chocolate cupcake (oh! and btw...I didn't go with a traditional liner! I found some super cute parchment paper and used that instead! It was a small cupcakery, but had this posh comfortableness about it. You seriously wanted to grab a cupcake and sit at the window seat and just soak in the view. The whole area around Sprinkles was so poshy! Christmas music was playing outside...people were shopping... The area seriously looked like something you would see in Beverly Hills...or New York. It's a Maple Syrup Frosting! And yes, it tastes just like maple syrup! I'm wanting to try this frosting with a Pumpkin Cupcake. Ooo! Yum!<br /><br />Anywho, back to the pancake cupcake. I thought this would be a great idea. I concocted my own pancake recipe and then popped in the oven just like regular pancakes. Around 15 mins later I pulled them out, let them cool off and added the frosting. Now I love pancakes. I can never get enough, but let me just say this. Pancakes are not made to be cupcakes. Was it gross? Did it not bake well? Nope, it tasted just like a good pancake and it baked very well. But it's a pancake...with frosting... I kept wanting to warm it up and pour syrup all over it...not eat a round cooled off pancake with frosting. It was just wrong somehow...Haha. I thought it was fitting because this cupcake feels very earthy with the chocolate and peanut butter combo. Vixen even wears a light brown suit that reminds me a lot of peanut butter and her powers come from an African totem she wears that allows her to mimic any animal on Earth. Like I said...very earthy! It also felt even more fitting when I realized that it was my first cupcake from scratch for Legitimized Baking.<br /><br />I felt that my traditional Vanilla Cupcake needed to be named after someone special, but not because of any super powers. Lois Lane popped into my head right away. She was a special, yet ordinary women. She couldn't fly around or shoot laser beams from her eyes and she wasn't invincible. She was ordinary...nothing incredible, but one superhero thought the world of her. She was special to him and because of that, the name Lois Lane would be famous forever. My traditional cupcake isn't anything "incredible". It's just a Vanilla cupcake topped with Chocolate. Ordinary. Except people love this ordinary cupcake so much that it's become special. I could definitely see Lois Lane stopping at my cupcakery, buying a vanilla cupcake with a strong cup of coffee, and nestling herself at a cozy corner window with her paper.<br /><br />I love how I'm able to incorporate my love for all things cupcake and comics together. :-)<br />And I love fulfilling cupcake orders! I don't think I know anyone who doesn't know this insatiable thief. She is one character who's hero/villain status is left “Undecided”. Yes, she steals lots of things. Yes, she hangs with the bad guys. But Catwoman doesn't destroy people's lives. She is a villain who has a moral code. She protects the innocent people and doesn't mind beating up the bad guys. The cupcake I chose for Catwoman was a semi-cupcake. A Black Bottom Cupcake is a simple chocolate cupcake with a Cream Cheese filling/topping with Chocolate Chips. The chocolate cupcake does not have an intense chocolate taste. It's a denser cupcake that is baked with the cream cheese and chocolate chip topping. Then I remembered that I had a Catwoman graphic novel upstairs. I just had to get a picture of the cupcakes with it! I positioned them around the book, snapped the picture and then I noticed something funny.
